Apple & Brie Stuffed Chicken: The Perfect Sweet and Savory Dinner

This Apple & Brie Stuffed Chicken recipe is the ultimate sweet and savory comfort meal. Juicy chicken breasts are filled with creamy, melted brie and crisp apple slices, then pan-seared and baked to perfection. Finished with thyme and garlic seasoning, this dish is ideal for fall dinners, holidays, or when you want something a little more special than your everyday chicken.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 apple (like Honeycrisp or Granny Smith), thinly sliced
  • 4 oz brie cheese, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme or rosemary
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine (for securing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice a pocket into each chicken breast by cutting horizontally through the side, being careful not to cut all the way through.
  3. Season the inside and outside of each chicken breast with salt, pepper, garlic powder, and thyme or rosemary.
  4. Stuff each pocket with a few slices of apple and brie cheese.
  5. Use toothpicks or kitchen twine to secure the openings and keep the filling inside while baking.
  6. Heat olive oil in an oven-safe skillet over medium heat. Sear the stuffed chicken breasts for 2 to 3 minutes per side, until golden brown.
  7. Transfer the skillet to the oven and bake for 15 to 20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for a few minutes before serving.

Notes

  • Choose firm apples like Honeycrisp or Granny Smith to prevent sogginess.

  • Don’t skip the searing step—it adds flavor and texture.

  • Use an oven-safe skillet to simplify the cooking process.

  • Secure the chicken well to prevent filling leakage.

  • Resting the chicken before serving helps retain juices and improves texture.
