Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon allspice
  • ½ cup unsalted butter, melted
  • 1 ½ cups unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup raisins (optional)

Instructions

Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan and set aside.

In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice.

In a separate bowl, mix melted butter, applesauce, eggs, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in walnuts and raisins if using.

Pour the batter into the prepared baking pan and spread evenly.

Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Serve plain, dusted with powdered sugar, or with a simple glaze if desired.

Notes

  • Applesauce Choice: Homemade applesauce adds the best flavor and moisture, but store-bought unsweetened applesauce works well too. Avoid sweetened varieties to control sugar levels.
  • Spice Blend: Adjust the amount of cinnamon, nutmeg, and allspice based on personal preference. More cinnamon gives a stronger spiced aroma.
  • Mix-Ins: Walnuts, pecans, and raisins are optional but add texture and extra flavor.
  • Texture Tips: For a chunkier texture, use chunky applesauce. For a smoother consistency, opt for pureed applesauce.
  • Storage: This cake stays fresh for 3 days at room temperature, 7 days in the fridge, and 3 months in the freezer when properly wrapped.
  • Variations: Easily make it gluten-free with a 1:1 gluten-free flour blend or dairy-free by substituting butter with coconut oil or plant-based butter.
  • Serving Ideas: Pairs wonderfully with coffee, chai tea, or hot apple cider.
