This crave-worthy Alice Springs Chicken is a mouthwatering restaurant-style dish made at home! Juicy grilled or seared chicken breasts are layered with crispy bacon, sautéed mushrooms, and a blanket of melted cheese, then drizzled with a rich honey mustard sauce. Inspired by the famous Outback Steakhouse favorite, this savory and slightly sweet dish is perfect for family dinners or when you’re craving a bold, hearty meal.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 6 oz (170g) turkey bacon, cooked and chopped
  • 6 oz (170g) chicken ham, chopped (optional for added flavor)
  • 1 cup sliced mushrooms
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup honey mustard dressing (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat oven: Set oven to 375°F (190°C).
  • Season chicken: Season chicken breasts on both sides with garlic powder, salt, and pepper.
  • Sear chicken: In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts for 3–4 minutes per side until lightly golden (they don’t need to be fully cooked). Transfer to a greased baking dish.
  • Add toppings: Brush each chicken breast with honey mustard dressing. Top with chopped turkey bacon, chicken ham (if using), and sliced mushrooms.
  • Add cheese: Combine cheddar and Monterey Jack cheese, then sprinkle evenly over each piece of chicken.
  • Bake: Bake for 20–25 minutes or until chicken is fully cooked and cheese is melted and bubbly.
  • Serve: Garnish with fresh parsley if desired. Serve warm with your favorite sides like mashed potatoes, rice, or steamed vegetables.

Notes

  • Chicken Prep Tip: Pound the chicken breasts to an even thickness for quicker, more even cooking.

  • Make It Ahead: The honey mustard sauce can be prepared up to 3 days in advance and stored in the fridge.

  • Cheese Options: Colby Jack is a classic choice, but cheddar or Monterey Jack work just as well.

  • Bacon Hack: Cook the bacon until crispy before assembling the dish—it adds the perfect crunch and flavor.

  • Serving Ideas: Serve with mashed potatoes, roasted veggies, or a fresh salad to balance the richness.

  • Shortcut Option: Use rotisserie chicken for an even faster version—just layer with toppings and bake until the cheese melts.
