Ingredients
  

  • 8 oz dry macaroni noodles
  • ½ cup finely diced sweet gherkins
  • ¾ cup finely diced red bell pepper
  • ⅓ cup thinly sliced celery
  • ⅓ cup finely diced red onion
  • 2 large hard-boiled eggs, finely diced
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp grape juice vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp garlic powder
  • ⅛ tsp crushed red pepper

Method
 

  1. Cook the macaroni in salted water until it reaches an al dente texture. Afterward, rinse it under cold water and toss it with a bit of olive oil.
  2. In a large mixing bowl, combine the cooked macaroni with the gherkins, red bell pepper, celery, red onion, and diced hard-boiled eggs.
  3. In a separate bowl, whisk together all the dressing ingredients until the mixture is smooth.
  4. Pour the dressing over the macaroni mixture and gently toss to ensure everything is evenly coated.
