Preheat the air fryer to 375°F. Season the chicken breasts on both sides with garlic powder, paprika, salt, and black pepper. If needed, slice thick breasts in half horizontally for even cooking.
Place the chicken in the air fryer basket and cook for 12 to 15 minutes, flipping halfway through, until the internal temperature reaches 165°F.
Remove the chicken and let it rest for 5 minutes, then slice it into thin strips.
Lay the tortillas flat and divide the sliced chicken among them. Add 1/4 cup of mozzarella cheese and spinach leaves to each wrap.
Fold the bottom of each tortilla up, then fold in the sides and roll tightly.
Place the wraps seam-side down in the air fryer basket. Cook at 350°F for 3 to 4 minutes until golden brown and crispy.
Serve warm with ranch dressing if desired.
