Quick to make and endlessly customizable, this recipe is perfect for easy lunches, casual dinners, or nostalgic bites with flair.

Ingredients

Scale
  • 4 slices chicken ham (thick-cut)
  • 2 tablespoons butter
  • 4 slices of your favorite bread (Texas toast or brioche works great)
  • 4 slices cheddar cheese
  • 1 tablespoon mayonnaise
  • 1 tablespoon mustard (optional)
  • 4 pickle slices (optional)
  • 1 fried egg (optional)

Instructions

Melt butter in a skillet over medium heat. Add the chicken ham slices and fry for 2–3 minutes per side until browned and edges are crispy. Set aside.

Toast the bread slices in the same skillet until golden brown, adding more butter if needed.

Spread mayonnaise (and mustard, if using) on one side of each toasted slice.

Layer a slice of cheddar cheese on one piece of bread, then add the fried chicken ham slices on top.

Add pickles and a fried egg if using. Top with the second slice of bread.

Press the sandwich gently in the skillet and heat for another minute or two until the cheese is melted.

Slice and serve hot.

Notes

  • Thick-cut meat is essential: Whether you’re using bologna or chicken ham, thick slices hold their texture better when fried.

  • Mayo-toasting trick: For extra crispiness, spread mayonnaise on the outside of the bread before toasting.

  • Use a skillet or press: A cast iron pan or panini press ensures even browning and full cheese melt.

  • Add heat if desired: Hot sauce, spicy mustard, or jalapeños are great for bold flavor.

  • Skip the egg for simplicity: While delicious, the fried egg is optional and best for when you’re serving the sandwich hot and fresh.
