For the Beef Bites & Potatoes:

  • 2 lbs beef chuck, cut into bite-sized pieces 🥩
  • 1 ½ lbs baby potatoes, halved 🥔
  • 4 tbsp unsalted butter, melted 🧈
  • 5 cloves garlic, minced 🧄
  • 1 tsp onion powder 🧅
  • 1 tsp smoked paprika 🌶️
  • 1 tsp dried thyme 🌿
  • 1 tsp dried rosemary 🌿
  • 1 tsp salt 🧂
  • ½ tsp black pepper 🌶️
  • 1 tbsp Worcestershire sauce
  • ½ cup beef broth 🥣

🔹 For Garnish:

  • 2 tbsp fresh parsley, chopped 🌿
  • ½ tsp red pepper flakes (optional) 🌶️

Instructions

1️⃣ Prepare the slow cooker: Lightly grease the inside of the slow cooker with non-stick spray or butter.

2️⃣ Season the beef: In a large bowl, toss the beef bites with garlic, onion powder, paprika, thyme, rosemary, salt, and black pepper.

3️⃣ Assemble in the slow cooker: Add the seasoned beef bites and halved baby potatoes to the slow cooker.

4️⃣ Add liquids: Pour in the melted butter, Worcestershire sauce, and beef broth. Stir everything gently to combine.

5️⃣ Cook: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is tender and the potatoes are soft.
