Instructions

Preheat the oven to 350°F (175°C). Lightly grease an 8-inch square baking dish.

In a bowl, toss the rhubarb with sugar, cornstarch, and vanilla extract. Spread the mixture evenly in the bottom of the prepared baking dish.

In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and vanilla extract. Stir until combined into a thick batter.

Spread the batter over the rhubarb layer using a spatula. It doesn’t need to be perfectly even.

In a small bowl or measuring cup, mix the boiling water, brown sugar, and melted butter. Pour this mixture gently over the top of the batter without stirring.
