Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease the cups.
  2. In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the buttermilk, eggs, and melted butter until smooth. Add this wet mixture to the dry ingredients and stir until just combined. Do not overmix.
  4. Fold in the shredded cheddar cheese and chopped jalapeños.
  5. In a small bowl, mix the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  6. Spoon a small amount of the muffin batter into each muffin cup to cover the bottom. Add about 1 teaspoon of the cream cheese filling to the center of each. Top with more batter to cover the cream cheese, filling each cup about 3/4 full.
  7. Bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted into the muffin (avoiding the cream cheese center) comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
