8 oz (226 g) cream cheese, softened
1/2 cup (60 g) powdered sugar
1 teaspoon vanilla extract
1 1/2 cups (135 g) crushed graham crackers
1 cup (180 g) chocolate chips
1 tablespoon coconut oil (optional)

Instructions

  • In a bowl, beat cream cheese and peanut butter until smooth.

  • Add powdered sugar and vanilla extract, then mix well.

  • Stir in crushed graham crackers until combined.

  • Chill the mixture for 30 minutes.

  • Roll into tablespoon-sized balls and place on a lined tray.

  • Freeze for 15–20 minutes.

  • Melt chocolate chips with coconut oil until smooth.

  • Dip each ball in melted chocolate and place back on tray.

  • Refrigerate until the coating sets.
