Ingredients

Scale

For the salad:

  • 2 cups cooked chicken, shredded or diced
  • 1 cup cucumber, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup Kalamata olives, sliced (optional)
  • ¼ cup feta cheese, crumbled
  • 2 tbsp fresh dill, chopped

For the tzatziki dressing:

  • 1 cup Greek yogurt
  • ½ cup cucumber, grated and squeezed to remove excess moisture
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. In a large bowl, combine the cooked chicken, diced cucumber, cherry tomatoes, red onion, olives (if using), feta cheese, and fresh dill.
  2. In a separate small bowl, whisk together the Greek yogurt, grated cucumber, lemon juice, minced garlic, olive oil, salt, and black pepper to make the tzatziki dressing.
  3. Pour the dressing over the salad and mix until everything is evenly coated.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled on its own, over lettuce, or in a pita wrap.

Notes

  • For Extra Creaminess – Add a tablespoon of mayonnaise to the dressing for an even richer texture.
  • For a Vegan Version – Replace the chicken with chickpeas and use dairy-free Greek yogurt.
  • For a Citrus Boost – Add a bit of lemon zest for a zesty, refreshing taste.
  • Storage Tip – Always store in an airtight container to maintain freshness and prevent the salad from absorbing fridge odors.
