  • 3 cups broccoli florets (steamed or blanched)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ½ cup shredded cheddar cheese (for topping)
  • ½ cup breadcrumbs or crushed crackers (for topping)

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

Heat olive oil in a skillet over medium heat. Sauté the chopped onion until softened, about 3–4 minutes. Add the garlic and cook for another minute.

In a large mixing bowl, combine cooked rice, steamed broccoli, sautéed onion and garlic, cream of mushroom soup, sour cream, shredded cheese, salt, pepper, and paprika if using. Mix until well combined.

Spread the mixture evenly into the prepared baking dish.

Top with the remaining shredded cheese and breadcrumbs or crushed crackers.

Bake for 25–30 minutes, or until the casserole is hot and the topping is golden brown.

Let it cool slightly before serving.
