Ingredients

Scale

For the salad:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 head romaine or iceberg lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup diced red onion
  • 1/4 cup sliced black olives (optional)
  • 2 cups Nacho Cheese Doritos, slightly crushed

For the dressing:

  • 1/2 cup ranch dressing
  • 1/4 cup sour cream
  • 2 tablespoons taco sauce or salsa
  • 1 teaspoon lime juice

Instructions

Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.

Add taco seasoning and water, stirring to combine. Simmer for 2-3 minutes until thickened. Remove from heat and let cool slightly.

In a large salad bowl, combine chopped lettuce, cherry tomatoes, shredded cheese, black beans, corn, red onion, and black olives.

Add the slightly cooled taco meat and toss gently to combine.

In a small bowl, whisk together ranch dressing, sour cream, taco sauce, and lime juice.

Drizzle the dressing over the salad and toss to coat evenly.

Just before serving, add crushed Doritos on top and toss lightly for crunch.

Serve immediately and enjoy.

Notes

Storage & Make-Ahead Tips

  • For best texture, add Doritos just before serving to maintain their crunch.
  • Store leftovers in an airtight container in the fridge for up to 2 days (without Doritos).
  • If making ahead, keep dressing separate until ready to serve.

Customization Options

  • Protein: Swap ground beef for chicken, turkey, shrimp, or black beans for a vegetarian option.
  • Dressing: Try Catalina, chipotle mayo, or avocado-lime dressing for different flavor profiles.
  • Chips: Replace Doritos with Fritos, tortilla chips, or pita chips for variety.

Serving Suggestions

  • Pair with Mexican rice or refried beans for a complete meal.
  • Add avocado, jalapeños, or guacamole for extra flavor.
  • Serve with a side of salsa or hot sauce for a spicy kick.
