For the dough:

  • ¾ cup warm water
  • ½ cup pumpkin purée
  • 2 tbsp granulated sugar

  • 2 tbsp olive oil

For the cinnamon swirl:

  • ¼ cup unsalted butter, melted
  • ⅓ cup brown sugar
  • 1 ½ tsp ground cinnamon

For the glaze:

  • ½ cup powdered sugar
  • 12 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. In a small bowl, mix warm water and yeast. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine flour, pumpkin purée, sugar, and salt. Add in the yeast mixture and olive oil.
  3. Mix until a sticky dough forms, then knead on a floured surface for about 8–10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  5. Punch down the dough and transfer it to a greased 9×13-inch baking pan. Stretch it gently to fill the pan.
  6. In a small bowl, mix the melted butter, brown sugar, and cinnamon.
  7. Use your fingers to dimple the surface of the dough, then drizzle the cinnamon mixture over the top, swirling slightly into the dimples.
  8. Cover and let the dough rise again for about 20–30 minutes.
  9. Preheat oven to 375°F (190°C), then bake the focaccia for 20–25 minutes or until golden brown and cooked through.
  10. In a separate bowl, whisk together powdered sugar, milk, and vanilla to make a glaze.
  11. Drizzle the glaze over the warm focaccia before serving.
