Cheesy Creamy Chicken Spaghetti in the Crock Pot

  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), undrained
  • 1/2 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 oz block of cream cheese, softened
  • 2 cups shredded cheddar cheese, divided
  • 12 oz spaghetti noodles, cooked and drained
  • Fresh parsley, chopped (optional, for garnish)

Instructions

Place chicken breasts in the bottom of a greased Crockpot.

In a mixing bowl, combine cream of chicken soup, cream of mushroom soup, Rotel, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well, then pour over the chicken.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

Remove the chicken and shred it using two forks. Return the shredded chicken to the Crockpot.

Add the softened cream cheese and 1 1/2 cups of shredded cheddar cheese. Stir until melted and well combined.

Add the cooked spaghetti noodles to the Crockpot and toss to coat evenly in the cheesy mixture.

Sprinkle the remaining 1/2 cup of cheddar cheese on top. Cover and cook on low for another 15-20 minutes until cheese is melted.

Garnish with chopped parsley if desired before serving.
