Ingredients

Scale

For the salad:

  • 2 ripe pears, sliced
  • 6 cups mixed greens (such as arugula, spinach, and romaine)
  • ½ cup blue cheese, crumbled
  • ¼ cup pecans or walnuts, toasted
  • ¼ cup dried cranberries

For the caramelized pears:

  • 1 tablespoon unsalted butter
  • 1 tablespoon honey or maple syrup
  • ¼ teaspoon cinnamon

For the dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper, to taste

Instructions

  1. In a small skillet over medium heat, melt the butter. Add the pear slices, honey, and cinnamon. Cook for 3-5 minutes, flipping occasionally, until the pears are golden and caramelized. Remove from heat and let cool slightly.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper to make the dressing.
  3. In a large salad bowl, combine the mixed greens, crumbled blue cheese, toasted pecans, and dried cranberries.
  4. Add the caramelized pears on top and drizzle with the dressing. Toss gently to combine.
  5. Serve immediately and enjoy.

Notes

  • Pears should be ripe but firm – This prevents them from becoming too soft when caramelized.
  • Toast the nuts – This enhances their flavor and crunchiness.
  • Use high-quality olive oil – It makes a huge difference in the dressing’s taste.
  • Pair it with wine – A glass of Sauvignon Blanc or Pinot Noir takes this salad to the next level.
  • For meal prep – Store ingredients separately and assemble just before serving to keep everything fresh.
