Ingredients

Scale
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup chopped walnuts or chocolate chips (optional)

For the glaze (optional):

  • ½ cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Stir in the mashed banana until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts or chocolate chips if using.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. If making the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.
  10. Serve and enjoy!

Notes

  • Use Overripe Bananas: The riper the banana, the sweeter and more flavorful your cookies will be.
  • Don’t Overmix the Dough: Mix just until combined to keep the cookies soft and tender.
  • Chill for Thicker Cookies: If your dough feels too soft, refrigerate for 30 minutes before baking.
  • Customize the Recipe: Add chocolate chips, nuts, or a simple glaze for extra flavor.
  • Storage Tips: Store at room temperature for up to 4 days, refrigerate for 7 days, or freeze for 3 months.

🍌 These cookies are a must-try for banana lovers!
